Mindful Meals Project - SMSU Enactus

SMSU Enactus is a 501(c)(3) non-profit student association.

We identify sustainability-based problems and opportunities in our communities and address these areas through student-led projects, programs, and initiatives that leverage social entrepreneurship practices.

One of our flagship projects is Mindful Meals, a food repurposing project in which we provide healthy, nutritious meals to families in the K12 school system in Marshall, Minnesota. We are entering our second year in the pilot, where we are expanding the number of families and meals served. Because we are positioning Mindful Meals as its distinct operation and to ensure we maintain sustainable kitchen operations, we have reached a point where we need volunteers for the kitchen operations.
